BABY TWICE BAKED POTATOES - by Dipsy Daisy
Ingredients:
- 2 dozen baby red potatoes
- 1 package Loaded Baked Potato Dip Mix by Dipsy Daisy
- 1 cup shredded cheese
- 2 green opnions, chopped
- 2 Tablespoons olive oil
- 1 teaspoon kosher salt
Directions:
Wash potatoes and put onto a cookie sheet. Drizzle 2 Tablespoons of olive oil over potatoes and sprinkle 1 tsp. kosher salt over the top. Shake pan to coat all potatoes. Bake in a 350 degree oven until fork tender (25-30 minutes). Remove from oven and allow to cool. Cut in half and scoop out center with a melon baller. Make dip mix according to package directions. Mash scooped out “potato ball” with a fork and add to dip. Spoon a portion of dip into each potato half. Sprinkle a little cheese and onion onto each potato. Serve.
